Florida baked Fish and Chips

Fish and Chips is definitely a staple on the East Coast whether you are up north or south. Unfortunately most of it is battered/fried and full of unnecessary unhealthy fats and way too much sodium.

This is the super healthy easy to make version which gives you all the goods and nothing you don't need! It is also a great start for getting kids to eat their vegetables!

We know fries are everywhere and tons of restaurants. However most of them are overly processed and contain extra ingredients. These are pure and full of great flavor and health benefits!

You'll need:

A small baking dish for the fish 9x9 size or around that

A cookie sheet for the potatoes

Add aluminum foil to both baking dish and cookie sheet

A medium to large bowl to mix the potatoes in

Set the Oven for 350 Degrees

For the Fish:

1-4 pieces of Fish of your choice (Grouper, Snapper, Yellowtail, etc.) dethawed from freezer

Place fish in the baking dish with the aluminum foil.

Marinate for a few minutes or spread on a high quality olive oil with a brush.

After that add on a tiny bit of a balsamic vinegar (I use Tarpon Springs Basil infused Olive Oil and a traditionally flavored Balsamic) Other flavors available HERE

Add seasonings: Sea Salt or salt of your choice, Garlic, Various Seasonings (I use Mediterranean), Cayenne Pepper (optional).

Place on the top rack in the oven for 25 minutes for a thicker fish, 20 for a thin fish.

For the Chips:

You will need 2-3 Potatoes or Sweet Potatoes

Cut ends off potatoes and then slice evenly into thicker slices. (See video for directions)

Place potatoes in a bowl for coating ingredients.

Pour on a high quality olive oil (I use Tarpon Springs Basil Infused) for the maximum health benefits. Swirl around potatoes in bowl.

Add seasonings to potatoes. I add sea salt and a little bit of garlic. Swirl around again.

Place potatoes lined up on the cooking sheet with aluminum foil.

Add additional sea salt on top if desired before placing in oven.

Place on the bottom rack in the oven for 30 minutes.

Preparation Note: I usually put in the potatoes/chips first since they are set to be for 30 minutes and then the fish second for 25 minutes.

Let cool a couple minutes. Use a flat cookie turner for fish and fries easy removal from pan.

This recipe gives you a great, easy meal for the family or can be a couple meals for a single person. It gives you the flavors you crave with the added health benefits of the olive oil and tiny bit of balsamic. You can't go wrong with this lunch or dinner staple!

I used sweet potatoes but you can use regular potatoes as well!
